Banana and Royal Nut Fairy Cakes

Buttermilk adds a lushness to bakes and is easily replaced by adding a little lemon juice to whole milk and setting it aside to do its thing. This added acidity interacts with the bicarb of soda and helps the batter to rise creating a light and fluffy cake.

Cooking instructions

* Step 1

Buttermilk: Place a teaspoon of lemon juice into the whole milk and set aside for at least half an hour to curdle. Heat the oven to 170 degrees C fan. Line fairy cake/muffin tins with paper cases. Batter will make 18 fairy cakes.

* Step 2

Take 2 large bowls. In the first add sifted flour, baking powder, bicarb of soda, caster sugar and cinnamon with a big pinch of salt. In the second add the melted butter, vanilla extract, eggs, mashed bananas and the milk.

* Step 3

Pour the wet ingredients into the dry ingredients and carefully fold until combined. Scatter in the chopped nuts and lightly fold to combine. Place a spoon of the batter into each fairy cake case. Top with the nut halves and a sprinkling of Demerara sugar then bake for 20 minutes until golden brown. Remove from the oven and brush the melted honey on top.
