K's Kulfipops
Kulfi, meaning covered cup, is a popular frozen dessert popular in South Asia and originates from the Mughal Empire in the 16th century. Milk was infused with saffron and pistachios and placed on metal cones which were covered in ice and salt to extend the life.
Ingredient

Cooking time :
5 minutes prep and 6 hours freezing
Cooking instructions
* Step 1
Put the saffron in a tablespoon of luke warm milk and set aside to infuse.
* Step 2
Whisk together the condensed and evaporated milks with the saffron milk, cardamom and pomegranate powder (if using), then stir in the whipping cream until just combined (do not overmix). Chop the pistachios and fold through.
* Step 3
Pour into lolly moulds, cover and place in the freezer for at least 6 hours then dip the lollies in the remaining chopped pistachios.
