It's World Earth Day today and the theme for 2022 is, 'Invest in our Planet' calling for us to invest in sustainable practices.

Cooking instructions

* Step 1

Ensure all the sinew is removed from the fish (otherwise it will curl up when cooking) and cut into large pieces. Mix together the turmeric, lime zest and juice and half the garlic and half the curry powder. Coat the fish and leave to marinade for at least 2 hours.

* Step 2

Add the coconut oil to a ;arge pan and heat. Add the seeds, cardamon, curry leaves, ginger chillies, salt and pepper and remaining curry powder and garlic. Stir and cook for 2 minutes until fragrant, then add the onions and cook for about 10 minutes until softened and taken on the colour from the spices. If starts to dry, add a little water.

Add a couple of spoonfuls of the coconut milk and cook for 5 minutes until the oil starts to separate, then add the remaining coconut milk, tomatoes, tamarind and season with a little salt. Simmer for approximately 15 minutes, stirring occasionally.

Add the marinated monkfish to the sauce and simmer over low heat for 8 - 10 minutes until opaque. Turn the heat off, cover and let it sit for a couple of minutes.

Serve with steamed rice and salad leaves.
