Lanky Tater Cakes
Potato cakes exist all over the world as Gromperekichelcher in Luxembourg and Gamjajeon in Korea but my favourites are traditional ‘tater cakes’ made from leftovers, the Lancashire way.

Cooking instructions
* Step 1
Heat the oven to 180 ° C Mash the potatoes roughly and add the onion.
* Step 2
Beat together the egg, flour, salt and pepper and add to the potatoes. Fold in the meat and/or vegetables.
* Step 3
Flour hands and form the mix into 4 rounds. Place on a baking sheet and spray with oil.
* Step 4
Bake for 20-30 minutes until golden brown.
