Cauliflower fried rice (Gobhi fried rice)

A unique fusion or combination of 2 indo chinese recipes made with deep fried Gobhi florets and stir-fried rice. it is particularly served as street food in cosmopolitan urban cities for its dwellers. the recipe is very much inspired by the popular chicken fried rice where gobhi would mimic the chicken. Yummy tasty

Cooking instructions
* Step 1
Firstly, in a large bowl take 30 florets gobhi, 1 tsp salt.
pour 3 cup hot water and rest for 10 minutes.
drain off the gobhi and keep aside.
now prepare the batter by taking ½ cup maida, 2 tbsp corn flour, ½ tsp chilli powder, ½ tsp ginger garlic paste and ½ tsp salt.
add ½ cup water and whisk to smooth lump free batter.
further add blanched gobhi and coat well.
* Step 2
Deep fry the coated gobhi in hot oil.
stir occasionally, keeping the flame on medium.
fry until the gobhi turns golden and crisp.
now drain off the gobhi and keep aside.
* Step 3
Firstly, take 4 tsp oil and saute 3 clove garlic, 1 chilli.
now add ½ onion and 2 tbsp spring onion. saute on high flame.
further add ½ carrot, 4 beans and ½ capsicum. stir fry.
* Step 4
Make a gap in the centre and add 1 tbsp vinegar and 1 tbsp soy sauce.
stir fry on high flame.
add in fried gobhi and mix gently coating sauces well.
further add cooked rice, 1 tsp pepper and ½ tsp salt and mix gently.
finally, add 2 tbsp spring onion and enjoy gobhi fried rice
