Festive Pecan-Cranberry 🧀 Brie Pastry Bites
My adaptation of a recipe I saw on "Delish". Using what I had in the house. Super tasty, bite sized appy for seasonal get together! You will need a mini-muffin tin.

Cooking instructions
* Step 1
Ingredients I had available. The cranberry sauce was just jelly, and I think the finished product would be better with whole cranberry jelly.
* Step 2
Preheat oven to instructions on pastry package
* Step 3
Unroll 1 pastry sheet, cut into 2 inch squares. I got 25 squares out of each sheet.
* Step 4
Spray each mini-tin with a shot of non-stick bake spray, place square in each space.
* Step 5
Place pan in oven and cook 2-3 minutes. Just enough to pre-bake and allow them to puff up a bit. Thus step helps make the bites more puffy.
* Step 6
Cut Brie in 1/2 inch cubes, while bites are in the oven.
* Step 7
Add 1 piece of cut brie into each space. You will use a bit less than 1/2 the Brie for 24 bites.
* Step 8
Use 1/2 can of jelly. Break it up in a bowl, scoop aprox 1 teaspoon of jelly into each space
* Step 9
Add 1 Whole Pecan into the middle of each space.
* Step 10
Put a pinch of Rosemary on each space
* Step 11
Place in oven on middle rack, bake for 10-12 minutes. Remove and let stand for 5 minutes before you remove from tin.
* Step 12
Serve warm! Note, they are a bit greasy, it may depend on the type of pastry you use.
