Roti with brinjal aloo fry
This is simply simple yet utterly filling and yummy.
Try out making soft rotis for your kids and they will surely relish it with the fry at school

Cooking instructions
* Step 1
Start by making the dough for roti.
In a mixing bowl, put atta, salt, and oil. Mix well.
Then gradually add lukewarm water to make a semi-soft dough.
Cover and keep aside for 10 minutes resting.
* Step 2
Meanwhile, heat a kadhai with oil. Splutter mustard seeds, and cumin seeds, and add dry red chili.
Next, add chopped onion. Saute till a little brownish.
Next, add small dice of potato. Fry for some time.
* Step 3
Next, add small dice of brinjal. Add salt, turmeric powder, red chili powder, and coriander powder. Give a nice mix.
Let it fry for some time.
Then cover and cook till it softens.
* Step 4
Give a nice gentle mix and let it be on slow heat for some time. Go for occasional stirrings.
Yummy brinjal fry is ready!!

Now take the rested atta dough, it must have become nicely soft.
Knead it again slightly and divide it into small portions.
* Step 6
Roll it out into thin rotis.
Heat a tawa. Put the rotis for roasting.
* Step 8
You will get soft puffed rotis.
Serve it in your kid's lunch box with the prepared brinjal aloo fry.
