Cooking instructions
* Step 1
In a mixing bowl put maida, salt, baking powder.
* Step 2
Add sugar and mix all well. Next, add curd and mix. Bring all the ingredients together to make a dough.
If your curd is water you won't need water for kneading, else use water.
* Step 3
While kneading adds oil and mix with all. A soft dough is formed. Brush some more oil on the dough and let it rest for 10 minutes.
* Step 4
After resting you find your dough is very soft. Knead it again. Take a rolling board. Dust some maida on it. Place generous portions of dough and make individual kulcha but I like mini kulchas so I make a big spread and take out small kulchas.
* Step 5
So I place my kulcha on the board and spread it into a big round base. Then sprinkle some kalonji and press.
* Step 6
Now take a round cookie cutter and cut out small kulchas.
* Step 7
Put those kulchas for cooking on slow to medium hot tawa. Flip sides.
* Step 8
Put butter or ghee and cook till it's crispy yet soft.
* Step 9
It's ready... Transfer to a serving platter.
* Step 10
Serve with spicy chole or tangy matar.
I'll share the recipe of chole and matar in another separate section to avoid any confusion.
So happy cooking!!
