Egg & Bacon Mayo For Sandwiches
I absolutely love a classic egg mayo sandwich, it's one of my all time favourites. In this version I've added little bits of bacon too, they add texture and saltiness. Go classic and add some salad cress for freshness.

Cooking instructions
* Step 1
Boil the eggs for 8-10 minutes then transfer to cold water to cool them down. Cook the bacon rashers using your preferred method and set them aside to cool.
* Step 2
Peel the eggs once cooled and discard the shells. Slice the eggs into chunks and put into a bowl. Season with salt and pepper. Chop the bacon up into little pieces and add it to the bowl. Next add the mayo and mustard. Using a fork mash up the eggs until the egg mayo is created.
* Step 3
Add in the spring onions and mix through. Make your sandwich and sprinkle over a tiny bit of smoked paprika plus some salad cress to finish. Enjoy! :)
