Shakshuka With Goats Cheese

Here's a version of shakshuka I like to make with soft crumbled melty goats cheese on top. Perfect as a hearty brunch. You can also find my recipe for shakshuka with black pudding on here which is equally as delicious!

Cooking instructions

* Step 1

Heat up a large cast iron skillet or non stick frying pan up over a medium heat. Once the oil is hot add in the onions and fry for a couple of minutes, then add in the pepper. Continue to fry for another three minutes.

* Step 2

Add in the garlic and fry for a few seconds then add the dry spices. Stir and fry until fragrant and cook the spices out a bit then pour in the tinned tomatoes. Stir again then season with salt and pepper. Bring to a gentle simmer.

* Step 3

Make a well in the tomatoes and crack in an egg, repeat on the other side of the pan with the other. Continue to simmer over a medium heat for 15-20 minutes until the whites of the eggs are opaque and cooked through.

* Step 4

Lower the heat and crumble over the goats cheese. Season with more salt and pepper. Cook for a further 2-3 minutes then remove from the heat. Scatter over a bit of fresh parsley. Serve up with buttered toast or fresh crusty bread. Enjoy!
