Hassleback New Potatoes With Garlic Butter & Thyme

These are an absolute joy to eat. They are super garlicky and crisp on the edges. They pair beautifully with lots of meals. The perfect side dish!

Cooking instructions

* Step 1

Preheat the oven to 200 (fan) or gasmark 7. Line a baking tray with foil. Take each potato and place on top on a tablespoon, within the curve so it sits snugly. Using a sharp knife carefully slice thin lines across the potato down until the knife hits the edge of the spoon. This will prevent you slicing too deep and cutting all the way through.

* Step 2

Fan out the slices a bit by gently taking each end of the potato and pulling it back on itself a little. Place them into the baking tray.

* Step 3

Drizzle them in a little olive oil then massage it into the potatoes a bit. Dollop over the minced garlic evenly across the potatoes then add a small blob of butter on top of each and rub it into the gaps. Season really well with sea salt and pepper. Sprinkle over the dried thyme.

* Step 4

Bake them in the oven for 50-60 minutes until crisp and cooked through. Eat and enjoy with your choice of dish! :)
