My Egg & Cheese Toastie

Here's my method for making this delicious egg & cheese toastie. It has the egg cooked into the top, which makes it look a bit more fancy! I like to garnish it with chilli and chives for extra flavour.

Cooking instructions

* Step 1

Heat a large frying pan up over a medium to high heat. Spray the base with some cooking oil to make a thin layer. Take the lightly toasted bread and butter what will be the outside of the sandwich once closed. Using the cookie cutter, cut a hole out of the centre of the top slice. This is where the egg will go.

* Step 2

Take the piece of toast with the hole cut into it and fry it butter side down for a couple of minutes then turn it over and break the egg into the hole. Fry it over a medium heat until almost cooked through. Using a spatula carefully move it over to one side of the pan. On the other side add in the other slice of toast, again butter side facing down. Add all of the grated cheddar cheese on top. Season with salt and pepper. Cook for a minute or two.

* Step 3

Now the section with the fried egg should be cooked through. Using a spatula carefully lift it up and place it on top of the piece with the cheese on to create the sandwich. Spray some more oil into the pan and turn the heat down. Gently fry the toastie, until the cheese is melted. Be careful not to burn the bottom at this point, keep checking it.

* Step 4

Now, if you don't like a runny yolk, here you can choose to flip the toastie over to cook the yolk a little, but I prefer it nice and runny so leave it as it is. Garnish the egg with the chives and chilli, season with salt and pepper to taste. Eat and enjoy! :)
