Lime-Sugared Cranberries

Absolutely inspired by IrishErin's Orange Sugared Cranberries, I came up with my own recipe for Lime-Sugared Cranberries, since I like limes, and this seemed more Christmassy colored. I would have just posted my twist on IrishErin's feed, but my twist on the recipe ingredients, amounts, and methodologies seemed different enough to warrant a new recipe. ;-P. Good stuff.

Cooking instructions

* Step 1

Dissolve the sugar into the water and lime juice into a large 2 quart saucepan, and heat to boiling.

* Step 2

Reduce by about a third.

* Step 3

Let the water cool to about lukewarm, and then add the cranberries. Be sure to clean the cranberries first.

* Step 4

Toss the saucepan into the freezer for about 45 minutes, stirring the mixture about every 10 minutes or so.

* Step 5

Meanwhile, combine the zest, pulp, and sugar in a bowl, mixing thoroughly, and then spread the mixture out on a cookie sheet.

* Step 6

Pour the liquid from the cranberries and use as a delicious base for cranberry limeade.

* Step 7

Roll the sticky cranberries around in the lime sugar until covered, and then let them all dry in the cookie sheet for an hour or so.

* Step 8

Plate and serve.
