Simple quick and easy Jam & Coconut cake.

Cooking instructions

* Step 1

First grease and flour a 2lb / 900g loaf tin. Preheat your oven to 170°C / 340°F / Gas mark 4

Add in the flour and baking powder, and whisk it in until the batter is smooth.

After the 50 minutes check the cake is done by inserting a toothpick into the centre of the cake, if it comes out clean the cake is done, if not give it a further 5 minutes.

Place the tin on a wire rack for 10 minutes before removing it from the tin.

* Step 5

Serve hot or cold with custard or just eat with tae or coffee. Enjoy!

#Tip: If using plain or all purpose flour add extra 1&1/2 tsp baking powder
