Brinjal Kadi/Raita

Brinjal kadi is popular in Odisha.

Cooking instructions

* Step 1

Chop the Brinjal into pieces and fry in oil/ghee

* Step 2

Mix salt, sugar, cornflour, water, grated ginger with curd.

* Step 3

Add panchaphutan, curry leaves, dry red chilli, chopped green chilli and cook on low heat fried Brinjal and bring to boil

* Step 4

Then add fried Brinjal and mix well with the masala curd raita/ kadi.

* Step 5

The delicious Brinjal kadi is ready to serve with hot rice/roti.
