Turkish Menemen: Eggs with Cheese & Tomatoes

This is one of the most traditional & quite popular Breakfast Recipes in the Turkish ones Eggs with Tomatoes

Cooking instructions

* Step 1

First up: Get ready with all the chopped veggies aforesaid, cheese & a very few ground spices- This particular recipe can be prepared quite a variety of ways….

Nevertheless, I try to keep it simple & just stick to its bare basic minimal structures with majorly the ingredients that’s into its core basics & I too prefer it that way…

Once all the Preppings are done Heat up a frying pan, over the medium-high flame - Add in the EVOO & Butter both- Sauté the chopped onions, Bell peppers, green chillies, add in some salt to it while sautéing- this will speed up the process of cooking the same faster- put its cover & cook, while stirring occasionally in between

We’re not looking out to brown the veggies at any point but just to get translucent, softer & mushy and almost half cooked when, we need to throw in the chopped tomatoes & reduce the flame to low-medium & let it cook for about 5-6 mins time by adding half of the grated cheese from the aforesaid measured quantity

Once the tomatoes turn mushy & juicy enough, uncover & allow the released water/juice to dry out a bit & then break in the eggs- one by one very carefully & gently so as not break the yolks in the process & allow it to sit on the mixture for a couple of mins or so & then gently break it slightly to get mixed up in the prepared tomato mixtures

Ensure, not to smash it completely but slightly & then, add in the grated cheese & cover it back to let it slow cook for another 5-6 mins time or until the cheese melts completely, turn off the flame and gently mix/stir it from the edges or sides to the middle & cover it back to sit on the hot oven for another 3-5 mins time before serving it piping hot

Transfer it to a serving plate- Garnish it your own way- Relish this Turkish DELISH with your choicest Breads & Hot Beverages, in your Morning Breakfast to pamper yourself immensely & plunge into the chores of the day, thereafter
