10 minute soba special - vegan
My go-to recipe for when i get home super-hungry. It’s delicious, healthy and filling ... and really does just take 10 minutes 🎉
Cooking instructions
* Step 1
Cook the soba according to the packet. When it’s ready, drain and rinse in cold water and set aside.
* Step 2
In a jug, mix the miso and water until the miso is dissolved.
* Step 3
Heat the oil in a pan on medium-hot heat. Add the spring onions and ginger. Cook for 2 mins.
* Step 4
Add the mushrooms and sauté for 2-3 mins.
* Step 5
Add the tofu and sesame seeds. Sauté for 1-2 mins.
* Step 6
Turn the heat down to low. Add the miso/ water. Stir the tatsoi through and leave for 1-2 mins.
* Step 7
You can add the soba to the tofu/ veg soup before serving. Or put the soba into bowls and then add the soup. Sprinkle with shichimi. Enjoy 😋
