Slow roast tomatoes

Slow roasting the tomatoes in pomegranate molasses results in a wonderful sweet/ acidic sauce. I like using all different colours. These are great as a side, alongside other small dishes or on toast 😋

Cooking instructions

* Step 1

Preheat oven to 150C.

* Step 2

Lay the tomatoes skin side down in a shallow ovenproof dish. Tick the thyme in. Then drizzle with the oil and pomegranate molasses. Season.

* Step 3

Bake for 2 hrs or so. When using bigger tomatoes, i leave them in a little longer.
