Corn & Zucchini Pasta with Spicy Ricotta

Cooking instructions
* Step 1
Halve the zucchini and thinly slice. Start boiling water for the pasta. Combine the ricotta and Chile paste.
* Step 2
Cook the pasta, reserving 1/2 cup of water
* Step 3
Cook the zucchini in a flat layer without stirring, for 2-3 mins or until lightly browned. Add the corn, season with salt and pepper. Cook, stirring occasionally for 2-3 mins or until softened. Add the garlic, season with salt and pepper, cook another 1-2 mins stirring frequently, then turn off the heat.
* Step 4
Combine the pasta and cooked vegetables and add the mascarpone + half the saved pasta water. Cook on medium-high for 1-2 mins stirring constantly until the pasta is thoroughly coated. Serve topped with the spicy ricotta.
