Cooking instructions

* Step 1

Process the yogurt, cottage cheese, sugar and coconut extract in a blender for about 15 seconds, or until smooth.

* Step 2

Transfer the mixture to a bowl, cover and refrigerate. Preheat the oven to 375°F. Spread the oats and almonds on a baking sheet and toast for 10 minutes, or until golden. Remove the sheet from the oven and set aside to cool.

* Step 3

Meanwhile, wash the grapes and strawberries, then hull and half the strawberries.

* Step 4

Just before serving, peel the bananas and cut into large chunks.

* Step 5

Place the bananas, grapes and strawberries in a bowl and spoon the yogurt mixture on top.

* Step 6

Scatter the oats, almonds, zante currants,over the yogurt and serve.
