California Farm Roasted Cheese Tomato Ham Eggplant
Delicious and simple, a burst of flavor with ingredients sliced thin, 1/4”. I use thin sliced roasted eggplant instead of lasagna noodles.

Cooking instructions
* Step 1
Roast eggplants: 8 slices, 1/4” thick, rub with olive oil, garlic, oregano, pepper, salt, roast a minute on each side. Drizzle lemon juice over. Make two stacks.
* Step 2
Roast tomatoes: 8 horizontal slices, 1/4” thick, roast in olive oil, oregano, garlic, salt, pepper, 1 minute, put on eggplant.
* Step 3
Sear ham: 8 slices, 1/4” thick, brown on both sides in olive oil, oregano, garlic, pepper, (no salt), lay on tomato. Drizzle lemon juice over.
* Step 4
Slice cheese: 8 slices, lay on top of eggplant, dab of tomato paste. Repeat this stacking pattern till all slices are used up.
* Step 5
Lay roasted pickled red pepper rings on top of ham. Drizzle lemon juice over.
* Step 6
Lay these two stacks in baking dish with glass lid, bake 45 minutes at 400F degrees. Sprinkle fresh basil on top, serve.
