Madras tomato soup

Ingredient

1/2 cup

onion

1 tsp

butter

2 tsp

sugar

Cooking instructions

* Step 1

Saute onion and carrot in butter until soft.

* Step 2

Add tomatoes, coconut and two cups of water. Add sugar, salt and pepper.

* Step 3

Pressure cook for 10 minutes or one whistle.

* Step 4

Cool this. Blend with a hand blender or mixer. Strain and serve hot with bread croutons.
