zucchini

Cooking instructions

* Step 1

Slice the eggplants, zucchini, patty pans and tomatoes into disks. About 0.5cm thick

Chop the peppers roughly. Chop the garlic finely and add to the peppers.

Chop the onions finely. Heat olive oil in pan. Add the onion and fry for 5 minutes or until translucent.

* Step 4

Add the chopped peppers and the can of whole peeled tomatoes.

* Step 5

Close the pan with lid and cook for 10 minutes or until the peppers are soft.

* Step 6

Season with salt and pepper.

* Step 7

Preheat the oven to 180Β°C.

* Step 8

Pack the vegetables (eggplant, patty pans, zucchini and tomatoes) in a circle ontop of the sauce.

Chop the basil roughly and sprinkle ontop. Drizzle with olive oil and season with salt and pepper.

Close with a oven safe lid or foil and bake in the oven for an hour.

* Step 11

Remove the lid and grill in the oven for 5 minutes.
