Butter chicken
This is my favourite comfort food! 😍 I served this with basmati rice - @The21Eats recipe and garlic naan bread - @aspoonfoodofyum recipe
Cooking instructions
* Step 1
Marinade: Peel the ginger with a spoon. Grate the ginger finely.
* Step 2
Peel the garlic cloves. Grate the garlic finely. You can also finely chop it.
* Step 3
In a bowl add the plain yoghurt, grated ginger, grater garlic, chilli powder, garam masala, turmeric, ground cumin and salt. Mix.
* Step 4
Place the chicken pieces in a container. Pour the marinade over the chicken. Marinade the chicken for at least one hour or overnight in the fridge.
* Step 5
After the chicken marinates. Remove from fridge and leave out for a few minutes to warm up.
* Step 6
Heat a pan with butter and oil. Grill the chicken pieces on both sides for a few minutes. Place in a oven safe bowl and keep warm in a low oven. Do not clean the pan use the same pan for the sauce.
* Step 7
Roughly chop the onions. Fry chopped onion in the chicken pan.
* Step 8
Peel and grate the ginger and garlic. Add the gated ginger and garlic to the onions. Fry for a few minutes.
* Step 9
Add the garam masala, ground cumin and ground coriander. Fry for a few minutes.
* Step 10
Roughly chop the tomatoes and add to the onions. Add the tomato paste.
* Step 11
Add the chilli powder, salt and sugar and fry for 10 minutes or until the tomatoes are soft.
* Step 12
Remove the pan from the heat and blend the sauce in a blender or with a stick blender.
* Step 13
Pour the sauce back into the pan. Add the coconut milk and mix. Add the chicken pieces and cook for 10 to 15 minutes or until the chicken is cooked.
* Step 14
Serve with basmati rice and homemade garlic naan bread.
