* Step 1
Sear the stew meat in a bit of oil.
* Step 2
Whisk together the bourbon and molasses and use to deglaze the stew meat pan.
* Step 3
When the bourbon sauce thickens, toss the seared meat in with a bit of butter.
* Step 4
Meanwhile, begin to brown the bacon in a large pot. When the bacon fat renders add the onions, jalapeños, and ground beef. Stir in plenty of paprika when the meats are browned.
* Step 5
Deglaze with a couple of bottles/cans of beer. Add the brown sugar. Simmer, partially covered until the chili thickens, at least an hour or two.
