Khasta matar kachori

Cooking instructions
* Step 1
For the outer crust... take a bowl add the wholewheat flour, salt, ajwain and warm oil and mix them well. With the help of little water knead the dough neither too soft nor too tight. Remember not to knead the dough too much... just combine together with light hands & cover with samp cloth and set aside for 15-20 mins.
* Step 2
Boil the green peas, drain the water and allow to cool. Grind into a coarse paste.
* Step 3
In a non stick pan heat some oil, add cumin seeds and let it crackle. Add all dry masalas and add the green peas paste and sauté till the moisture evaporates. Shut the flame and let it cool down. Add chopped coriander leaves and mix.
* Step 4
Make lemon size balls of the dough and roll it into puri size and add the filling of peas peethi into it. Wrap and make into balls again.
* Step 5
Roll them again into puri size.
* Step 6
Then deep fry them in oil. Making sure that oil isn’t too hot and fry them on medium to low heat for them to turn out crispy.
* Step 7
And enjoy it while it’s still hot and serve with green mint chutney or khatta meetha tamarind chutney.
