Tuna Melt French Toast Roll Ups

#morningbreakfast A new & exciting way to enjoy tuna melts! Filled with tuna meat & tomatoes, this is delicious and perfect for the lunchbox!

Cooking instructions

* Step 1

Cut the crust from the bread slices and flatten them using a rolling pin. In a shallow bowl, whisk together the eggs, milk, and salt to taste. Spread the breadcrumbs into a shallow plate. In a bowl, mix together the tuna meat, chopped tomatoes, lemon juice, chopped parsley and cream cheese until well combined. Place ½ tsp of the tuna mixture on each bread slice and spread it over the bread. Roll up each slice tightly to form a roll.

* Step 2

Melt butter in a pan. Dip one roll at a time in the egg-milk mixture, roll in the breadcrumbs place in the pan. Allow the roll ups to saute for 1-2 mins per side until golden brown on all sides & slightly crisp on the outside. Add more butter to the pan if needed. Drain the cooked roll ups on a paper towel. Serve warm with ketchup or tomato sauce, sprinkled with a few drops of lemon juice, if desired.
