Cooking instructions
* Step 1
Soak the chana overnight. Next day wash and pressure cook for 7-8 whistles at high flame and switch off gas. Pressure cook with little salt & turmeric.
* Step 2
When steam goes off completely from cooker, sieve chana and keep water. Chana will be 80% cooked here.
* Step 3
Take a wok. Add ghee. Heat it.
* Step 4
Add all masalas listed above except amchur.
* Step 5
Lightly cook masalas and add chana water around 1/4th cup in masalas to avoid burning them
* Step 6
Now add cooked chana. Nicely toss chana with masalas for 1/2 a minute
* Step 7
Add 1 cup chana water and close lid and let chanas cook.
* Step 8
Now add whole off this mixture in cooker again abd add 1 cup more chana water and take 5 more whistles.
* Step 9
When steam goes off, open and add amchur. Cook for a minute. Garnish with coriander
* Step 11
Please note: instead of wok, you can do all this in cooker itself
