This makes for perfect healthy snacking as it is not fried and is lightly greased with ghee. I have topped it up with cheese but that is totally an optional ingredient and depends from person to person if they wish to include in their diet.
Stuffing is made from Matra or white peas which are known for their various nutritional value. So now make your snacking guilt free.

40 minutes in oven
Cooking instructions
* Step 1
Peel the potatoes and cut in half. Flatten the surface from bottom so that it can sit easily and do not roll over.
* Step 2
Scrape out the potato from between to make it hollow for filling. Grease lightly with ghee from outside and keep aside.
* Step 3
Now for stuffing, in a bowl, mix boiled matra with onion, tomatoes and green chillies with spices like chaat masala, roasted cumin powder and salt. Stuffing is ready.
* Step 4
Fill this stufiing in hollow potatoes and top lightly with grated cheese if you want to.
* Step 5
Line the potatoes in baking tray over butter paper and bake for 40 minutes at 200 temperature.
* Step 6
Serve hot and enjoy with and creamy spicy dip.
