Tandoori chicken club sandwich

Club Sandwich originated in America but is also a huge favourite of the Pakistani community. It is basically three slices of sandwich bread with layers of meat, cheese, salad, mayonnaise and eggs in between. This iconic double-decker sandwich - this tandoori club sandwich is made with layers of tandoori chicken, omellete, crispy lettuce, cucumber slices, cheddar cheese and a cheese dressing. It's a very quick, make-ahead recipe for sehri or iftari.

Cooking instructions

* Step 1

Heat oil in a pan.

* Step 2

Whisk the egg with salt and chilli powder and pour in the pan to make an omelette. Remove and set aside.

* Step 3

Spread cheese dressing on slices of bread.

* Step 4

Now assemble the sandwich as follows:

* Step 5

On one slice place cucumber slices and lettuce leaf. Cover with second slice (dressing side up) and place cheese slices, top with omelette and chicken. Cover with the third slice, dressing side down.

* Step 6

Heat a grill pan.

* Step 7

Apply butter on top of the sandwich and place on grill pan, butter side down. Toast till crunchy..

* Step 8

Apply butter on top side and gently flip. Toast till crunch.

* Step 9

Remove and cut into 4 triangles and secure with toothpicks and serve.
