Anda mesub

Anda Mesub is a traditional halwa recipe of the Bohri community in Pakistan. The texture varies from grainy fudge to biscuit-like bar. There are a few variations in which it is made with five ingredients. I making it with three ingredients, which is more authentic.

Cooking instructions

* Step 1

Beat the eggs in a wok till foamy.

* Step 2

Add the sugar and mix well till dissolved.

* Step 3

Add ghee and switch on the flame.

* Step 4

Cook the egg mixture on medium-low heat, with constant stirring for even cooking, for 30-45 minutes.

* Step 5

Once the colour change, increase the flame to high and keep on stirring till grainy.

* Step 6

Transfer to a tray and spread even with a rubber spatula.

* Step 7

Garnish with nuts. Then press a bit to let it set well.

* Step 8

Place cut after 15 minutes when halwa appears a bit set to touch. Let the halwa set over for 4-6 hours before serving.
