Til Gur Laddoo / तिळगुळ लाडू
It's the season of Makar Sankranti harvest, where the sun is in phase of Uttarayan and new crops have arrived with lots of celebration! The first dessert recipe which comes in the minds for Sankranti is Til Gur Laddoo( bliss balls/ truffles) or Til Gulache Laddoo! Made with roasted and ground sesame seeds and jaggery , its a delicious, wholesome, iron and calcium rich dessert . My favourite always. Can't stop making it! 😋
We Maharashtrians offer these Laddoos to our guests and say "eat tilgul and talk sweet" or " तिळगुळ घ्या गोडगोड बोला"🥰🥰☀️☀️

Cooking instructions
* Step 1
First, take the sesame seeds on a fine seive and wash them well. Then dry them on a cloth for 2 to 3 days. Then pass the sesame seeds through a sieve to remove any dirt.
* Step 2
Take a thick based large kadhai and roast them on slow heat for 20 to 25 minutes or till crisp. Cool them to room temperature.
* Step 3
Then grind to a coarse powder in pulse motion to avoid release of oil. Transfer to another pan.
* Step 4
Make one string sugar syrup with grated jaggery and 1/4 cup water. Then add cardamom powder and mix well.
* Step 5
Add the sesame powder, combine well, remove from heat and then roll into Laddoos while still warm. Grease palms with ghee if needed. This has the be done quickly.
* Step 6
Store them in dry airtight container for 15 days in the refrigerator and 1 week without refrigeration. Enjoy! Shubh Sankranti ☀️🫒🌾🌻🪁
