Rasmalai is a perfect dessert for Holi as after playing colours in the hot sun, the chilled , creamy, flavourfull and delicious Rasmalai tastes so good! This dessert is rich with saffron infused milk, paneer, chopped nuts , cardamom and rose petals !

Cooking instructions
* Step 1
First, to make the chenna rasmalai balls, keep the water to boil in a large pan. Add cardamom let it reach a rolling boil.
* Step 3
Till water boils, knead the paneer and maida in a flat plate with the back of your hands till soft, adding orange food colouring and saffron strands for saffron flavour and colour.
* Step 4
Make medium sized balls and flatten them ensuring no cracks are there.
* Step 5
Drop them in water one by one and boil for 10 to 12 minutes partially covered.
* Step 6
When the rasmalai balls look light and spongy, take them out and let them soak in the saffron sugar syrup made as follows:

Boil water, sugar saffron strands, cardamom pods, orange colour till sugar melts. Boil till half string and cool to room temperature.
* Step 8
Let the chenna balls soak in the syrup for 1 hour.
* Step 9
Make the rabdi by mixing all the required ingredients in a deep and thick bottomed pan.
* Step 10
Let it thicken by stir cooking. Then cool in refrigerator.
* Step 11
To serve, place the rasmalai from the syrup on a flat serving dish. Pour the rabdi on top. Garnish with chopped nuts, kesar and rose petals.
