These carrot and mango Cup cakes are super delicious and super healthy too. They will make your valentine day extra special! Traditional colour of Valentine day is red, but I have added a touch of yellow ! Enjoy!!

Cooking instructions
* Step 1
First, assemble all the ingredients and bring them to room temperature. Grease and Line cupcake tin with paper liners.
* Step 2
Start oven to preheat at 170 °c for 10 minutes.
* Step 3
In a deep, dry bowl, sieve and combine all the dry ingredients.
* Step 4
In another bowl, beat sugar, oil or butter, milk, essence, till it is Creamy.
* Step 5
Gently fold in dry ingredients into wet mix with cut and fold method. Lastly add in grated carrots and chopped mangoes. Combine gently.
* Step 6
Scoop into cupcake molds till 3/4 th or a little less filled. Tap twice and keep in preheated oven to bake for 20 to 25 minutes.
* Step 7
They are done when an inserted toothpick comes out clean. Take out and cover with a tea towel for 10 minutes.
* Step 8
Garnish with whipped cream and sugar candies and silver balls on top.
* Step 9
