Cooking instructions
* Step 1
First, let's mix the dough:
Combine whole wheat flour, besan, 1/2 tsp salt, sesame seeds, ajwain sugar and oil or ghee in a bowl. Rub well with fingers.
* Step 2
Now mix to dough as needed for stuffed paratha and keep aside covered.
* Step 3
Now, heat ghee or oil in a pan. Add carrots, cauliflower and saute well. Add ginger garlic paste and mix well. Then add peas, potatoes and mix well. Stir cook for a minute.
* Step 4
Then add all the spices, and 1 tablespoon water and combine well. Cook covered for 2 minutes till water is absorbed.
* Step 5
Switch off flame and add lemon juice and coriander leaves. Cool the stuffing and then make into lemon sized balls.
* Step 6
Similarly, make lemon sized balls from the dough and fill each one with the stuffing.
* Step 7
Then keep griddle to heat. Roll out thick parathas and roast on both sides.
* Step 8
Then apply oil or ghee on the sides and roast again.
* Step 9
Make all the parathas similarly. Serve delicious Republic Day special Veggie Paneer parathas with ketchup, green chutney and curd or Mayo.
