Pumpkin Sambar

The sambar made with pumpkin and it's seeds is very nutritious with vitamins and minerals, especially for winter and has amazing taste and texture. Enjoy with soft and fluffy homemade idlis and chutney !

Cooking instructions

* Step 1

First, pressure cook tur daal or pigeon pea lentils with 2 cups of water till soft.

* Step 2

Also steam chopped carrots, beans and pumpkin till just soft.

* Step 3

Then mash the daal and mix water as per consistency needed.

* Step 4

Heat oil. Add mustard seeds, asafoetida, curry leaves and red chillies. Saute well.

* Step 5

Add onions, ginger garlic paste and fry till onions are translucent.

* Step 6

Then add the vegetables, tomatoes and cook till tomatoes are little soft.

* Step 7

Then add turmeric powder, chilli powder, sambar powder, pumpkin seeds and 1/4 cup water. Mix and cook for 5 minutes till aromatic.

* Step 8

Then add vegetables, daal and mix well. Add salt, tamarind paste and jaggery powder, mix well and cook for 5 minutes.

* Step 9

Then add 1 tablespoon hot ghee for extra taste (optional). Then serve in pumpkin shells or halves of scooped pumpkin with chutney and a plate of hot steamy fluffy Idlis! Enjoy!
