Maharashtrian Dal

#thc #thcweek4 #toordaal #cookpadindia Maharashtrian cuisine is incomplete without tempered toor daal which is called Varan, Phodniche varan or aamti. Ita served with steamed rice or chapati. It's a favourite in every household. Rich in proteins, vitamins and energy, it completes the meal. Here is my simple version of the recipe. Try it.

Cooking instructions

* Step 1

First, mash the cooked lentils and add water. Make a smooth mixture without lumps by using a masher or back of ladle.

* Step 2

Heat oil in a kadhai. Add mustard, cumin and let them pop up. Then add rest of the ingredients like ginger garlic chopped,, curry leaves hing, turmeric powder and Chilli powder, one by one and keep stirring on low flame.

* Step 3

Then add the toor daal and mix well. Let it boil for 1 minute. Then add jaggery, tamarind or Kokum and salt to taste.

* Step 4

Mix and boil for 2 to 3 minutes till aromatic. Lastly add the Maharashtrian goda masala and stir. Cover for 1 minute. Then garnish with chopped coriander leaves.

* Step 5

Serve delicious Phodniche varan with rice or poli (chapati). Enjoy!
