Schezwan Fried Rice

Schezwan Fried Rice

Cooking instructions

* Step 1

First, boil 6 cups water. Add salt, 1 tsp oil and when it reaches to rolling boil, add the soaked and drained rice and cook open till 90% done.

* Step 2

Strain and keep spread out in a wide plate till used. Mix 1 tsp oil to avoid the grains sticking.

* Step 3

Now heat rest of the oil in a wok or karahi. Add onions, spring onions, ginger,garlic, chopped dry red chillies and fry well on high to medium flame.

* Step 4

Then add the bean, carrots, capsicum, mushrooms in order of 1 minute interval while stirring and cooking till they sizzle. They should be slightly soft and have crunch.

* Step 5

Add the sauces, tomato puree and cook further for 5 minute. Add some water if needed. Then mix in rice and stir fry everything while tossing well. Do not mash the rice.

* Step 6

Then add salt, pepper, sugar and any extra sauces if liked. Then pour a tsp of oil for glaze, mix well and then remove from heat. Pour in serving plate, garnish with chopped spring onions and green stalks.

* Step 7

Serve hot with choice of soup, sauces or gravy. Chinese Fried rice is ready to enjoy.
