In Maharashtrian cuisine, salads and chutneys play a very important role and there are numerous varieties of them. The salad is called koshimbir which is a mix of crunchy local and seasonal vegetables , seasoned with lemon juice or curd and tempered with oil, mustard, curry leaves , hing and turmeric. Its very tasty and wholesome. A must try.

Cooking instructions
* Step 1
First make sure that all the chopped are refrigerated for 1/2 an hour.
* Step 2
Just before meal, take out and mix all the veggies in a bowl. Add chillies, crushed peanuts, coconut and mix well.
* Step 3
Then heat oil, add mustard, cumin, hing, curry leaves, turmeric powder and when it sizzles, add on salad and cover for a minute. (You can also add black pepper vans grated ginger when it's cold outside)
* Step 4
Lastly, add salt, sugar, lemon juice and mix. Garnish with coriander, mint and sprinkle cumin on top. (In place of lemon juice, add fresh curd and mix) Serve fresh and enjoy delicious Koshimbir😋
