This Diwali, I have made Kesari Rava Burfi which is a delicious and easy to make dessert made with semolina, saffron, sugar and pure ghee. Dry fruits can also be added as a garnish but it tastes yummy as it is. Happy Diwali 🎆 to all !

Cooking instructions
* Step 1
First, heat ghee in a thick bottom kadhai and roast sooji till it turns light gold and leaves aroma. Keep the flame low. After the sooji is roasted, add milk powder, milk, mix well and cover. Switch off flame. Avoid over roasting the sooji.
* Step 2
Side by side, make sugar syrup and add saffron to it. You can add kesari food colour if preferred. Switch off flame when sugar syrup reaches thick consistency of one string.
* Step 3
Then slowly add the sugar syrup to the sooji, switch on the flame and keep mixing till all ingredients are properly combined. Cook on slow flame till the mixture turns thick and leaves side. Tip:-(Don't make the mixture too thick as it will become hard later. If it looks too thick, add 1 spoonful milk.)
* Step 4
Grease a metal tray with ghee and pour the sooji mixture on it. Press all over with the help of spatula till the top is even and smooth.
* Step 5
Once it becomes warm, make marks for burfi with a knife. (square or diamond shaped) Decorate with a dot of kesar food colour or kesar syrup. Once set, cut into desired shape and serve. Enjoy.
