Vegan Tofu and Veggies Bowl

#veganlife #veganbowl #veganrecipes Following a Vegan diet has become a worldwide phenomenon recently. It signifies saying no to any animal origin food including dairy. I love trying out different vegan recipes and here I have made a wholesome salad bowl with tofu and exotic fruits and greens. Enjoy.

Ingredient

Food ration :

4 servings

Cooking time :

10 minutes
1 medium

Beetroot

1 small

Cucumber

2 small

Carrots

1 small

Radish

1 teaspoon

Mixed herbs

1/4 teaspoon

Chilli flakes

1 tablespoon

Lemon juice

Cooking instructions

* Step 1

First wash and clean all the vegetables. Dry them well.

* Step 2

Peel the beetroot, carrots, cucumber and radish. Cut into medium sized cubes. Also cut capsicums into cubes. Use the peels in making vegetable stock for soups.

Clean the lettuce and cabbage and dip the leaves in ice cold water for 10 minutes. Then drain and chop them roughly and add to a mixing bowl. Add all the other veggies, fruits and tofu.

* Step 4

Mix all the ingredients fir dressing in a separate bowl and then pour over the salad. Toss everything gently till combined. Garnish with beetroot sticks. Serve chilled.
