Mugachi Khichadi aani Masalyache Taak: Moong Daal/Sprouts Khichdi with spiced Buttermilk
Every Maharashtrian household adores it's comfort food Mugachi Khichadi aani Taak (Moong Khichadi with Buttermilk)..Especially on those days when everyone wants to eat something light and quick ..and the lady of the house can just be comfortable with her own me-time without spending too much time in the kitchen..this dish is nutritious and tasty served with a dollop of pure ghee!!

Cooking instructions
* Step 1
Wash the rice and gram well. Soak on water for 10 minutes. Also wash the chillies, curry leaves, mint leaves and corner leaves.
* Step 2
Heat ghee in a pressure cooker or pressure handI. Add cumin seeds, ginger, asafoetida, chopped green chillies. Stir well and witch off flame.
* Step 3
Add half of this tadka to the curd and mix well. Keep the curd aside. Then heat the tadka again and add the drained rice and green gram or sprouts. Fry well for 1 minutes. Add turmeric powder, red chilli powder,garam masala, salt, sugar, chopped corinder leaves, and stir well.
* Step 4
Add the hot water and put on lid and pressure cook for 15 minutes on low flame or 5-6 whistles. Till the khichdi cooks, prepare the spiced buttermilk by adding cold water to the curd along with salt,cumin powder, chopped mint leaves, ginger and whisk well till it gets mixed with the previously added tadka.
* Step 5
Switch off flame from pressure cooker and cool it for 10 minutes. Then take out the khichdi in a serving bowl and add a tablespoon of ghee on top. Add chopped coriander leaves for garnish.
* Step 6
Serve the hot and yummy comfort food Mugachi Khichadi with Taak which means buttermilk in marathi, accompanied by some mango pickle and salad or papad. Satisfaction for whole family assured!
