Fried Chicken Biryani

#WIN #WEEK6 Fried chicken  biryani is slightly different from the usual method, the chicken is first fried and then added to the masala. This is the easiest and delicious biryani.

Cooking instructions

* Step 1

Clean and Wash the chicken very well. In a vessel add 3-4 cups water add 2 tbsp salt and food colour.add chicken pieces and soaked for at least 30 minutes. If you have time soaked for 1-2 hours. After that remove the salty water and wash the chicken again. Take a mixing bowl add all ingredients mention above for marination and mix add chicken pieces and mix well. Marinate the chicken for 1 hour, keep in yhe refrigerator.

Meanwhile the chicken has marinated,wash and soaked the rice into water for 30 minutes and let's do some preparation for the gravy. In a mortar pestle add ginger and crushed it then add garlic and crushed it to make it coarsely ground. Add green chillies and fennel seeds and also crushed them into mortar pestle.

When water started boiling add the soaked rice,add salt and bring it boil on high flame.thrn turn the flame medium and cooked the rice 80%.then strain it and wash with running water.keep aside to strain all excess water from it.

* Step 4

Take a kadhai add oil heat it then add chopped onion and fry till they turn golden brown. Remove from oil and keep aside.

* Step 5

In the same oil add the marinated chicken pieces. Fry them on high flame for a minute then flip them and fry on medium flame for 8-10 minutes to change their sides.remove from oil and keep aside.

Now in the same oil add whole spices,saute 30 seconds add coarsely ground ginger,garlic, green chillies and fennel seeds.cook for a minute. Add tomatoes and 1/4 cup fried onion and keep remaining for after use.

* Step 7

Add salt and red Chilli powder,mix it. Cover and cook for 3-4 minutes on low to medium flame until the tomatoes turn soft. Now add curd,curry leaves and the remaining marination masala.add little water to avoid burning mix and cover. Cook for 2 minutes.

* Step 8

When oil has separated add fried chicken pieces mix well.cover and cook for 8-10 minutes.add biryani masala cook for 1 minute. Turn the flame low and remove the kadhai from gas.

* Step 9

Now take a big vessel first make a layer of boiled rice,spread 1 part of chicken,then sprinkle some fried onion and mint leaves on it.

* Step 10

Do again the same process for second and third layer. In a bowl or katori take 3tbsp water and add orange food colour. On the top layer spread fried onion,some mint leaves,then sprinkle coloured water and kewra water. Cover and cook on simmer for 8-10 minutes. After that turn off the flame.

Now mix it and dish out.
