Baingan Aloo sabzi

Cooking instructions

* Step 1

Take a kadhai and add oil. Heat it. Add brinjal pieces and fry on high flame for 3-4 minutes. remove it from the oil and add potatoes and fry in the same oil until they turn golden brown.

* Step 2

Now leave 2 tbsp oil in the kadhai and remove excess oil. now add cumin seeds and asafoetida when they crackled add chopped ginger, garlic, curry leaves, and green Chilli, saute one minute then add fried brinjal and potatoes and saute for a minute.

* Step 3

Add chopped tomatoes, powdered spices, and salt and mix well. cover and cook for 8-10 minutes or until the potatoes turn soft. stir occasionally. When the potatoes turn soft then cooked them on high flame for 2-3 minutes or until the oil is released.

* Step 4

Add coriander leaves.mix it. turn off the flame. serve with roti or paratha.
