Amritsari kulcha is a popular cuisine from Punjab.It works great with choley or potato curry in combination with sweet/sour lassi.
Ingredient
Food ration :
3 serving.
Cooking time :
30 minutes.
Cooking instructions
* Step 1
Mix all the ingredients of kulcha dough in a bowl,except butter.
* Step 2
Add some water and make a soft dough.The dough should be sticky.Apply butter on it and knead for 3-4 minutes.Cover the dough and leave for 30-40 minutes.
* Step 3
Meanwhile boil potatoes,peel and mash.Add all the ingredients mentioned for filling.Mix well Add maida to give the dough a smooth texture and it will help to roll the kulchas easily.
* Step 4
After 30-40 spread dough in a thali,or on a board.Apply butter on it.
* Step 5
Fold one side.Apply a little butter.
* Step 6
Fold the other side,apply a little butter.
* Step 7
Flatten with the help of finger and seal the edges as shown in picture.
* Step 8
Divide the dough into 6-8 equal portions.Fill one portion with potatoes,give shape of kulcha with the help of hand.
* Step 9
Heat a cast iron tawa on high flame.wet on side of kulcha with water and put on tawa with the wet side down,reduce flame to medium.Wet upper side of kulcha and apply some kasuri methi onit.
* Step 10
Cook kulcha for 1 minute,then upside down the tawa and cook kulcha on upper side for 2-minutes on medium flame.Rotate tawa in between to cook kulchas uniformly on entire surface.
* Step 11
When cooked properly,take out and apply butter on the kulcha.Prepare all the kulchas in same manner. Kulchas are ready to serve.
* Step 12
Serve hot with choley or potato curry.
