Cooking instructions

* Step 1

Wash the veggies, keep aside. Take a pan, add 2 tbsp oil, heat it. Fry eggplant until light brown.

Now add onion in the same pan, saute it for a minute. Keep aside.

Take a wok, add oil, heat it. Add kalonji seeds, let it splutter.

Add green chilli & onion, stir fry it until light brown.

In goes ginger garlic, mix it well. Cook it until rawness is released.

Now add tomato & salt, mix it well. In goes haldi powder & dhania powder, mix it well. Add very lil water to avoid burning, cook it for a minute.

Now add fried eggplant & onion, stir it for a minute.

Cook it covered on low flame for 5 minutes. Do not over cook it.

Meanwhile soak kaju & makhana in boiling water for 1 hr, grind it to a fine paste with lil water. Keep aside.

Mix curd & 1 tbsp makhana kaju paste, add in the masala, mix it well. Cook it until oil has oozed out, do not over stir it.

In goes Kashmiri red chilli powder & garam masala powder, stir fry it for a minute.

Add dhania patta now, mix it well. Turn off the flame, cover it with the lid for a minute.

Take out in a serving bowl, garnish it with a dhania sprig..
