Our Indian Cuisine is very diverse.. An Egg Curry can be made with many ways..
Here I have given a twist to the base recipe...

Cooking instructions
* Step 1
Peel eggs, make 3 gashes, keep aside.
* Step 2
Take a pan, add onion, kaju & green chilli, top up with water, boil it until onion changes colour. Turn off the flame, cool it down. Grind it to a fine paste, keep aside.
* Step 3
Take a wok now, add 2 tbsp oil, heat it. Add eggs.
* Step 4
Stir fry eggs until light brown, keep aside.
* Step 5
Add rest of the oil in the same wok, remove any charred traces of egg. Heat it. Add whole Garam Masala, saute it for 30 sec. Add zeera now, let it splutter.
* Step 6
In goes ginger garlic paste, saute it until a lil brown, add lil water to avoid burning.
* Step 7
Now add onion masala, mix it well. Add lil water, cook it for 5 minutes.
* Step 8
Add haldi powder, dhania powder & red chilli powder, mix it well.
* Step 9
In goes salt. Mix dahi & fresh cream, add in the masala, mix it well.
* Step 10
Cook it covered on low flame until oil has surfaced.
* Step 11
Open the lid, increase the flame, add garam masala powder & kasoori methi, stir it for 30 sec.
* Step 12
Now add eggs, stir it gently.
* Step 13
Add 1 cup boiled water, mix it well. Give a boil.
* Step 14
Lower the flame, cover it with the lid, cook it until gravy becomes saucy.
* Step 15
Turn off the flame, open the lid after 5 minutes.
* Step 16
Take out in a serving bowl, garnish it with chopped dhania patta.
* Step 17
Can be served along with Tandoori Roti, Naan or Lachcha Paratha...
