Fermented Hot Peppers
Cooking instructions
* Step 1
Add 1 cup of water and salt in a 1 quart size saucepan. Gently heat till salt is dissolved
* Step 2
Pour hot water over 1.5 to 2 pints of ice and wait till fully melted. You should have a ~quart of brine when finished.
* Step 3
Combine water and peppers in a wide mouth mason jar. Add you weight so all the peppers are submerged. Added you fermentation lid and store in a cupboard for 1-2 weeks
* Step 4
After fermented, pour contents into a 1 quart saucepan. Bring to a boil, cover, and lightly simmer for 15 minutes
* Step 5
Separate the peppers from the brine (save the brine). Add a 50/50 mix of vinegar and brine to taste and 1 teaspoon of sugar to a blender and blend till liquified.
* Step 6
Store in the fridge and use as needed
