This is a simple and creamy flavoured mixed vegetable recipe. Made with coconut masala and mild spices. It is one of the South Indian versions of vegetable kurma.

Cooking instructions
* Step 1
First, prepare masala paste. Take all the ingredients into the blender and ground them in a smooth paste. Then chop all the vegetables and set them aside.
* Step 3
Next in a large cooker heat oil and ghee sauté spices few minutes. Then add onion and sauté well. Then add ginger garlic paste and sauté a few minutes. Further, add tomato and sauté until soft then add curry leaves, and coriander leaves mix it well.
* Step 5
Next, add turmeric powder and chili powder mix it well, and cook for a few minutes. Now add all the vegetables and salt and sauté for 3 minutes or until vegetables are stir-fried.
* Step 6
Next, add in the prepared masala paste and add 1cup of water close the cooker lid make it two whistles then turn off the flame after five minutes open the lid then cook for 5 minutes.
* Step 7
Vegetables are cooked completely.
* Step 8
Finally enjoy veg kurma hot with roti or chappathi.
