Mexican quinoa salsa in cucumber pockets

Take a cucumber

Cut it into small pieces.

Now scoop the pieces cucumber till they resemble like tiny pockets. Preserve the scooped cucumber for later use.

Now in a bowl add the chopped capsicum, tomatoes, onion, scooped cucumber, coriander leaves and boiled rajma.

Mash the boiled rajma,add ketchup and mix well.

Now add boiled quinoa and salt and mix well.

Now take the cucumber pockets and fill the pockets with the prepared salsa.

Plate and serve.
