Mexican quinoa salsa in cucumber pockets

Cooking instructions
* Step 2
Cut it into small pieces.
* Step 3
Now scoop the pieces cucumber till they resemble like tiny pockets.
Preserve the scooped cucumber for later use.
* Step 4
Now in a bowl add the chopped capsicum, tomatoes, onion, scooped cucumber, coriander leaves and boiled rajma.
* Step 5
Mash the boiled rajma,add ketchup and mix well.
* Step 6
Now add boiled quinoa and salt and mix well.
* Step 7
Now take the cucumber pockets and fill the pockets with the prepared salsa.
